Ear infections are nasty. They can leave a person completely out of commission for days and for children, who are particularly prone to them, an ear infection can last for weeks.

The medical term for an ear infection is otitis and there are three different areas in which infection can thrive:

External Otitis

This is general referred to as swimmer’s ear and affects the outer ear and canal. With this type of pain, the ear is increasingly sensitive to touch and may appear red or inflamed. The cause is generally a bacterial build up or fungal infection on the skin in the ear tube.



Otitis Media or Middle Ear Infection

This type of pain comes as a result of ear drum perforation or the buildup of fluid behind the eardrum. This is most common in children but can happen to all ages. The pain is more of a deeper throbbing sensation and can often cause fever and headaches.

Otitis Internal

This inner ear infection can cause loss of hearing and balance problems as the inner ear includes sensory organs for balance. When the inner ear is inflamed it can lead to vertigo and severe fever and headaches.

So what can be done to alleviate the pain and help heal the ear when struggling with an infection?

I have been wondering for a long time about mammograms and how safe they are.  I am not yet at the age to experience having one yet.  The thought of having my breast squeezed in a machine makes me cringe.  I don't think us women should be put through it.  There is an easier way to test for breast cancer.  Why should we be subjected to the radiation from a machine.

This is a great detox juice with my favourite ingredient the beetroot.  

Beetroot has many health benefits, it is high in glutathione, polyphenols and betalains, all of which have excellent antioxidant properties. Instead of getting anxious or depressed, try and focus on a few things like:-

What things do you have that make you grateful such as your health, somewhere nice to live.

The thing that is happening to you will make you stronger as a person and it is not always going to be like this.

Focus on the now and live for that day and not to think of what the future will hold.

Try to get out in nature or do yoga, or meditation.  Take time for yourself and find your own space to just be one with yourself.

What makes you a happy person, try and distract yourself from the bad thoughts and do something that makes you happy.

BLUEBERRY AND CHOCOLATE CAKE TRIFLE


Chocolate Cake
40g/1/3 cup coconut flour
30g/1/4 cup almond flour
34g/1/4 cup cacao powder
1 tsp. baking soda
1/2 tsp. salt
2 tbsp honey
3 eggs
70g/1/3 cup coconut oil  or melted butter
160ml/2/3 cup almond milk
1 Tbsp. lemon juice
1/2 tsp. Vanilla

Cake Directions:
Preheat oven to 190 degrees C. Line an 8″ round cake pan* with parchment paper.  Combine coconut flour, almond flour, cacao powder, baking soda, salt and baking powder in a bowl and whisk to combine.  Add honey, eggs, coconut oil or melted butter, almond milk, lemon juice and vanilla to the dry ingredients and mix well.  Pour cake batter into parchment paper-lined cake pan. Bake for 17-22 minutes. It is ready when you insert a toothpick and it comes out clean. Leave to cool.



For the Cream
1 can full-fat coconut milk, left in the fridge for at least 24 hours
1 tablespoon honey
1 tablespoon vanilla extract

2 cups fresh Blueberries or blackberries or strawberries

Open the can of coconut milk and take out the cream at the top.  Empty into a bowl and whisk up the coconut milk with the honey and vanilla extract.


Chop up the chocolate cake into chunks.  Start by putting a layer of cake in the bottom of a glass dish, next add some blueberries and then some cream.  Continue to layer up until you reach the top.  You could add some grated dark chocolate for the top.

Ingredients
255 g dark chocolate
120 ml natural cashew and macadamia nut butter or cashew and almond butter (60ml of each)
80 -120 ml raw honey
1 tsp pure vanilla extract
grated zest of one orange
100g finely chopped dried apricots








Lightly grease a 9 x9 inch (20 cm.) square pan, or line with parchment paper.  In a glass or metal bowl set over a pot of simmering water, melt the chocolate.  Mix in the nut butter until smooth; remove from heat.  Add the honey, vanilla and orange zest, and stir until combined.  The mixture should thicken up a bit as you stir.  Spread in prepared pan and smooth the top.  Chill until set (2-3 hours), then cut into squares.  Wrap in plastic before packaging as gifts.  Makes 12-25 squares, depending on how small you cut them.

Our digestion is very important.  We can eat the healthiest diet there is but if we are not digesting our food, then we need to sort it out.  

How do you know that you have digestion problems?  If you have any discomfort at all when you have eaten, such as heartburn, indigestion, stomach pain, bloating, excess gas, constipation or diarrhea then there is a problem.

You could have some food sensitivities, you have low stomach acid, the motor in your gut that keeps food moving through your digestive tract may not work very efficiently, you can develop small intestine bacteria overgrowth, candida, gut permeability, not enough good bacteria to balance out the bad bacteria in the small intestine.  

It doesn't stop there.  With regard to food sensitivities, there are also things to consider like FODMAPS, oxolates, phytic acid, histamines.  You may have problems with some foods high in these.  

The most common offenders here is gluten and wheat, sugar and dairy.  You can start by eliminating all these foods for 2 weeks and if you feel better then you know you have a problem eating them.

Everyone is different and so you will need to customise a diet especially for you that works where you can digest your food and absorb the nutrients from your food.

Makes 9 biscuits

Ingredients:
6 eggs
57g/1/4 cup bacon grease or grassfed butter/ghee (Melted, and slightly cooled)
200g/1 cup grated cheddar cheese
1/4 tsp. sea salt
1/4 tsp. onion powder
1/4 tsp. garlic powder
60g/1/2 cup + 2 Tbsp. coconut flour
1 tsp. baking powder
Herb seasoning of your choice
(Optional: 4 slices of crunchy bacon, crumbled)




Directions:
Blend eggs, bacon grease, and cheese.   Combine coconut flour with baking powder, salt, onion powder, garlic powder.  Combine wet & dry ingredients until uniformly mixed.  Stir in the bacon bits.  Drop batter onto a baking tray lined with parchment paper or a Non-stick mat.   Flatten slightly with the side of a butter knife or spatula, if desired or for burger buns.  Sprinkle with herb seasonings.  Bake at 200 degrees C for 15-20 minutes.

CREAMY CHICKEN WITH SWEET POTATO MASH

CHICKEN WITH SWEET POTATO MASH

Ingredients

3 large sweet potatoes
3 tablespoons coconut oil
1 brown onion
2 garlic cloves
8 field mushrooms
60ml/1/4 cup water
6 large kale leaves
120ml/1/2 cup coconut cream
6 organic chicken highs
Himalayan salt and Black Pepper
Approx 1/2 – 1 cup fresh basil leaves

Chicken Dinner


Directions
Prepare and cook the sweet potato to make the mash and then set it aside ready for serving.  Chop the onion and garlic and slice the mushrooms.  Place the coconut oil into a large frying pan on medium to high heat. Add the garlic and onion and sauté for a few minutes.  Remove the stalks from the kale leaves and slice them up finely.  Add the sliced mushrooms, kale and the 1/4 cup of water to the pan.  Give it a good stir and then cover it and let simmer for approx  10 minutes or until the mushrooms have cooked through and reduced in volume.  Pour in the coconut cream and add a good pinch of salt and pepper.  Place the whole chicken thighs into the pan (press then down into the sauce). Reduce the heat to medium, cover and let simmer for approx  5 minutes.  Turn the thighs over and continue to cook for another  5-10 minutes or until the chicken is cooked.  Remove the pan from the heat, then stir through the fresh basil leaves. Add some extra salt and pepper if it needs it and then serve it up on top of the sweet potato mash.

Serves 4

For the jelly
3 cups unfiltered apple juice
2 whole allspice
3 cloves
1 cinnamon stick
1 teaspoon powdered gelatine

For the mousse
1 cup whipping cream
1 cup Greek yogurt
120ml/1/2 cup water
2 tablespoons coconut sugar
1/2 teaspoon powdered gelatin
Nutmeg or ground cinnamon, for garnish (optional)

You could also use coconut cream from the top of a can of coconut milk.  Put the cream into a bowl and whip up into whipped cream and put on top the apple jelly.

In a medium pot, bring the apple juice, allspice, cloves and cinnamon stick to a boil.  Boil uncovered for 15 minutes or until the juice has reduced to 2 cups.  Fill a sink or large basin with a few inches of cold water and place the pot in the cold water bath.  Let cool 15-20 minutes, or until the juice no longer feels warm to the touch.



While the juice chills, make the mousse. Whip the cream until it holds soft peaks and set aside in the refrigerator.  Place the yogurt in a medium bowl and whisk until smooth. In a small pot, combine the water, coconut sugar and 1/2 teaspoon gelatin and bring to a boil. Lower the heat and simmer for 2 minutes, stirring once or twice.  Working quickly, whisk the hot mixture into the yogurt. Add the whipped cream and whisk just until smooth. Place the mousse in the refrigerator to chill for at least 2 hours, or up to 2 days. (Cover with plastic wrap after 2 hours.)


Once the juice has cooled, have four 1/2-cup capacity glasses or ramekins ready. Put the pot back on the stove and sprinkle the juice with 1 teaspoon gelatin. Bring to a boil. Lower the heat and simmer for 2 minutes, stirring once or twice. (Don't let the mixture boil madly or it will become foamy.)  Pour the juice into the glasses or ramekins. If there are any bubbles or bits of foam, they can be scooped out with a small spoon. Place the glasses in the refrigerator to chill for at least 2 hours, or up to 2 days. (Cover with plastic wrap after 2 hours.)  To assemble the dessert, whisk the yogurt mousse until smooth.  Spoon a dollop of mousse onto each jelly and top with a sprinkling of freshly-grated nutmeg or cinnamon. Once assembled, the dessert will keep in the fridge, covered, for up to 24 hours.

CHOCOLATE AND COCONUT TART

CHOCOLATE AND COCONUT TART


I love coconut and I wanted to make a tart with a nutty layer, a coconut layer and a chocolate layer. This is my end product.  The layers are thin but you could double the recipe to make the layers thicker and you could make the top layer all coconut and chocolate instead of half coconut and half coconut and chocolate.

Ingredients

Base layer

100g pecans (or any other nut of your choice)
2 pitted medjool dates (you could use other dates just soak for 30 minutes to go soft first)

Filling

150g creamed coconut
100g dessicated coconut
55g coconut oil
25g raw cacao powder
1 tbsp honey

Start by putting the nuts into a food processor with the dates and process until the mixture starts to stick together.  Press into a round flan tin with a loose bottom.  I used a 9" tin.  Put into the fridge to set.

Melt the creamed coconut and coconut oil together then place into a food processor and add the honey and dessicated coconut.  Process for about 5 minutes to break down the dessicated coconut a bit.




If you want to make the next layer all chocolate, add 50g cacao powder to the mixture and mix together.  If you want a white coconut layer and a coconut and chocolate layer, put half the mixture into another bowl and add the cacao powder and mix in.  Press the white coconut mixture onto the base layer and then do the same with the coconut and chocolate layer.  Place back in the fridge to set.  

When set press out of the tart tin and leave to soften to room temperature before slicing.  Its easier to slice when it is soft.
